Creativity and curiosity drive Head Chef Peter Howarth, and his kitchen team.

Unfettered by self-imposed restrictions as to style or theme, Peter’s aim is to create the most delicious food possible, from a seasonal palette of ingredients. As with all great artists, spontaneous inspiration is then crafted by skill and experience garnered by years of dedication.

Some of the most popular dishes on our menus were sparked by sources as diverse his mother’s Fish Pie, to Seaweed – via the Himalayas and Hawkshead. Inspiration for a dessert may start with high street confectionary and end in Japan.

Of course the Lake District has a wealth of exceptional food resources that are too good to ignore, supplemented by home-grown from our own 76 acres of gardens, greenhouses and wild woodland – before a net is cast over the best of seasonal British produce.

The quest to produce great food is limitless.
